About me

Hi, I’m Virginia — Registered Dietitian and founder of Softly Nourished.

My food philosophy is simple: real, lasting change takes time — and it’s worth it.

I believe in learning how nutrition works so you can confidently choose foods that support your health, while also leaving room for the foods that bring you happiness. Sustainable progress happens when both your body and mind are nourished.

My approach is shaped by both education and lived experience. I’ve spent years working in eating disorder recovery — and I’ve also personally navigated anorexia, binge eating, emotional eating, and the endless cycle of dieting that never brought peace. It wasn’t until I began fueling my body properly that everything shifted, my stress decreased, inflammation improved, energy returned, and food stopped feeling like a battle.

Now as a Registered Dietitian, I combine evidence-based nutrition, behavior change strategies, and empathetic support to help clients build habits that actually last.

I earned my Bachelor’s degree in Communications from Michigan State University and my Masters in Science degree in Dietetics through Eastern Michigan University’s coordinated program, with clinical training across eating disorder care, community nutrition, clinical care, school nutrition, and outpatient counseling. I’ve also completed additional continuing education in sports nutrition, eating disorder care, medical nutrition therapy for chronic disease management, and gestational diabetes to further support clients with personalized, evidence-based care. I currently work closely with individuals during pregnancy and postpartum, including gestational diabetes support and weight management throughout pregnancy.

At Softly Nourished, I’m a person first and a dietitian second. I’ll meet you with empathy, understanding, and real-life support, then use science and personalized nutrition to help you feel your best for the long run.
